Spaghetti Bolognese

I love a classic spag bowl  for dinner in this one I amp it up with vegetables to make the meal go further and keep me full for longer. Serves 8 (good for freezing for busy nights)

500g lean mince (I use pork, kangaroo or beef)

2 zucchinis, grated

2 carrots, grated

1 can of no added salt 4 bean mix, drained and rinsed

1 brown onion, chopped

1 clove garlic, chopped

1 tablespoon mixed herbs

1 bottle passata

1 tbsp low salt tomato paste

1/2 bag high fibre or spelt pasta

Parmesan cheese to serve

Method:

1. Spray a pan with oil (I use rice bran oil)

2. Once warm add onion and garlic and cook until transparent

3. Add mince and cook until brown

4. Add zucchini, carrot, passata, tomato paste and mixed herbs

5. Bring to boil and then turn down to low heat and cook for about 30 minutes

6. Bring a medium saucepan of water to boil and cook pasta for 12 minutes or according to packet instructions

7. Drain pasta and service topped with sauce and Parmesan cheese
