Salmon Sushi Salad

This is a really quick and easy recipe, I also make this salad on a Sunday and have with tuna/cooked chicken as my lunches throughout the week.

Ingredients (serves 4)

500g salmon fillet

2 cups cooked brown rice

1/4 cup rice wine vinegar

1/4 cup soy sauce

1 cucumber, chopped

1/2 tub bean sprouts

1 cup snow peas, chopped

2 carrots, chopped

1 red chilli, chopped


1. Combine soy sauce, vinegar and chilli in a small bowl

2. Add all vegetables and rice to a salad bowl and mix

3. Heat grill/pan and add salmon

4. Cook for approximately 10 minutes or until cooked to your liking

5. Pour dressing over salad and serve
