Beef Burritos

Ingredients (serves 4)

1 brown onion, chopped

1 tbs garlic, crushed

1 green capsicum, thinly sliced

500g lean beef mince

1 carrot, grated

1 tomato, chopped

2 cups baby spinach

1 tbs chilli flakes

1 tbs plain flour

1 tbs ground coriander

1 cup low salt beef stock

3/4 cup grated low fat cheese

1/2 Avocado

4 high fibre wraps

Natural yoghurt, to serve

Method:

1. Heat pan with a spray of oil, add garlic and onion and cook until soft

2. Add mince and cook for approx 10 minutes or until brown, breaking apart mince with spoon

3. Add chilli, coriander, capsicum and stir to combine

4. Add  flour, tomato paste and chicken stock, reduce to low heat and simmer until sauce thickens

5. Fill wraps with yoghurt, avocado and salad ingredients and top with mince mixture
